Nutritional Sources

Nutritional Sources
Legumes, especially soybeans, pack an extra nutritional punch because they are rich sources two groups of phytochemicals called phytoestrogens and phytosterols that lower the risk of developing breast cancer and heart disease. (The phytoestrogens in soy products also might help curb hot flashes associated with menopause.) Preliminary evidence suggests that as little as 15 ounces of soy milk or 2 ounces tofu daily is enough to reap the health benefits of these phytochemicals.

Another important dietary strategy is to avoid foods that generate free radicals, such as fried foods, processed foods made with oils, and fatty foods in general.

Lactose in Children

Lactose in Children
It is true that plenty of us lack the enzyme lactose, which handily breaks down lactose before it even reaches our small intestines. With rare exception, we're equipped with it as children.

But as we grow up, we begin to lose this enzyme. By age five or six, 70 percent of the world's population-including about 50 million Americans-don't have it.

Symptoms

Symptoms
Even if you lack the enzyme, however, that doesn't mean you will get symptoms after drinking milk. "The body has other mechanisms to avoid these symptoms, and most of the people we have tested can tolerate 2 cup of milk a day," Says Dr. Suarez. He has studied people who have trouble digesting lactose and found that besides the 2 cups of milk, they can eat 8 ounces of yogurt and 2 ounces of cheese daily with only minor symptoms.

Drank Milk
And even those who were lactose maldigesters-unable to break down lactose-had the same symptoms whether they drank milk or another substance that looked and tasted like milk, even though it didn't have any lactose in it. Apparently, says Dr. Suarez, they were mistaking symptoms of something else for lactose intolerence. In another study, Dr. Suarez found that lactose maldigesters can tolerate 2 cups of milk a day. Other who thought they were lactose intolerant did have some flatulence, but it occurred whether or not they had a food or beverage containing lactose.

Ingesting Dairy Products

Ingesting Dairy Products
If you experience discomfort after ingesting dairy products, you probably avoid them like the plague. That's the wrong approach. Few of us give our intestines much thought, but the fact is they have bacteria whose job is to break down things such as lactose. And with some gentle encouragement-namely, a steady dose of lactose-these bacteria multiply to help handle the job. In a study at Kent State, when people who could not digest lactose received daily doses of lactose, after three days the number of bacteria that help break down lactose had tripled.
