If you experience discomfort after ingesting dairy products, you probably avoid them like the plague. That's the wrong approach. Few of us give our intestines much thought, but the fact is they have bacteria whose job is to break down things such as lactose. And with some gentle encouragement-namely, a steady dose of lactose-these bacteria multiply to help handle the job. In a study at Kent State, when people who could not digest lactose received daily doses of lactose, after three days the number of bacteria that help break down lactose had tripled.
