A National Institutes of Health study of the diets of 4,730 women, as an example, found that diets rich in fiber did, in fact, exert a small though discernible protective effect. "At the very least, eating more fruits, vegetables, and whole-grains foods rich in fiber is a good defense against obesity, which we do know increases gallstone risks."
