More important than the total amount of fat, however, is the type of fat we eat: saturated (found in meats, eggs, dairy products, and tropical oils), polyunsaturated fats (those in vegetable oils such as corn, safflower, sesame, and soyabean), and monounsaturated fats (from olive, canola, and nut oils).
